Interestingly, our sense of taste is closely tied to our sense of smell. Try this simple experiment, as suggested by my colleague and sommelier, Joel Lall, owner of In Higher Spirits in Fairfield, CT: Take a piece of mint, hold your nose, and chew the mint. While holding your nose, you won’t taste much. Now, release your nose—suddenly, the taste of mint becomes apparent! This illustrates why our sense of taste is diminished when we have a cold.
Aromas and food smells play a crucial role in stimulating our hunger. As we anticipate the flavors based on enticing smells, it’s like Ravel’s Boléro—the aromas build gradually until we are finally met with the flavors that match the delicious scents and visually pleasing presentation. The entire sensory experience culminates in a satisfying taste.

While summer offers the freshness of garden vegetables and crisp citrus flavors, Fall and Winter bring the culinary experience indoors with hearty, simmered, or roasted dishes.
